Lillie, Photoshop doesn't know the paper size. You can tell it the "canvas size" if you like, using the Image>Canvas Size tool in Photoshop. Then you would be able to see what you would get on the page, assuming you use the 1280 to print full bleed.
But you don't have to bother to do that. If Photoshop is sending a print that is smaller than 5.5 x 7.5 to the printer, the printer will simply center it on the paper. So if, for instance, your image were 5x7, you would get a quarter-inch border on your print. If the image were 5x7 and you used 9.5 x 13 paper (user defined size) as I often do, you'd get a little 5x7 image in the middle of this big piece of paper.
Give it a try. It should work fine.
