I agree with the general notion, but the specifics are a bit more complicated in the example you chose.
: That menas wide angle in 4x5 gives you the depth of field that a portrait lens does on 35mm. That can drastically change your perceptions of how you're going to shoot something.
Depth of field is in part determined by the tolerable "circle of confusion". The more you are going enlarge your picture, the smaller it has to be. For 35mm film it it typically taken to be on the order of a couple of hundredths of a millimeter, while on an 8x10 it would be a couple of tenths. Digital sensors are much smaller than film, for the most part, and have an even more stringent tolerance (or, in the alternative, a smaller DoF than film). What you get from a Canon Rebel is different than from a Kodak 14n.
