Robin, I've been away from the industry for several years, but for what it's worth shoots for models will not approach your usual prices for portraiture, nor will the profit margin. In the Atlanta area, which is a fairly significant market, prices run between about $300 and $1200 for three to six rolls. The higher end prices usually include a set of fifty or one hundred printed color comp cards. Several years ago an Atlanta modeling school contacted me about shooting for them on regualar basis. I declined as they wanted to pay me fifty bucks per person above the cost of film and processing, for three 'looks'. They also wanted the shoots done outdoors on loaction instead of in my studio.
As far as style, portfolio session are generaly more dynamic than portfolios, with more action included. Take a look at the Arlene Wilson site, an agency with a number of photos on line, for some samples. http://www.arlenewilson.com/main.asp They show both their commercial and fashion book.
In my own experience, before retirement I ran a commercial studio in Atlanta. I did some test shoots, both paid and non paid for a couple of agencies which which I worked. Financially they were pretty close to break even, but brought in a couple of bucks on down days toward the monthly 'nut' and were good 'practice' for the makeup artists.
