You're not alone...
Eye color is one of the most elusive elements of a photograph, unless you're shooting 100 percent daylight-balanced light sources, with daylight film/settings. Bridal photography comes to mind for a time when getting eye color and dress color right is crucial.
Light just slightly off axis can make eyes appear transluscent, giving real pop to the color.
If you really want the best eye color, you have to give up all sorts of other things, like warm skin tones. The exaggerated warmth of Faith Hill's videos, for instance, kills the blue in her eyes.
